What to Look For in a Chef Knife

Forged, Full-Tang Construction

A forged blade with a tang running the full length of the handle stands up to heavy chopping and balances near the bolster. Rivets should sit flush, with no gaps where food and water can collect.

A Finer Edge Angle

Most German-style knives are sharpened to about 14 to 15 degrees per side. A finer angle near 12 degrees slices tomatoes and onions with less force while still holding up to firm vegetables.

Steel Hardness in the Sweet Spot

Look for stainless steel rated 56 to 60 HRC. Softer steel dulls quickly. Much harder steel holds an edge longer but can chip on bone or frozen food and is harder to sharpen at home.

Caring for Forged Stainless Steel Knives

Wash the knife by hand in warm, soapy water and dry it right away. Dishwasher heat and jostling dull the edge, and trapped moisture can pit even stainless steel. Hone on a steel rod every few uses to realign the edge, and sharpen on a whetstone once or twice a year. Cut on wood or plastic boards, never glass or stone, and store the knife in a block, on a magnetic strip or in a sheath.

Is an 8-inch chef's knife the right size for most home cooks?

Yes. An 8-inch blade is long enough to split a squash or slice a roast in one stroke and short enough to control for mincing. Cooks with small hands may prefer a 6-inch knife, but it limits larger jobs.

Should I choose a German-style or Japanese-style chef's knife?

German-style knives use tougher, slightly softer steel and a curved belly suited to rocking cuts. Japanese knives are harder and thinner, so they cut finer but chip more easily. A forged Western knife with a finer edge angle offers much of both.

How often should a chef's knife be sharpened?

Hone it every few uses to straighten the edge, and sharpen it when it starts to skid on tomato skin or crush onions instead of slicing them. For stainless steel in the 58 to 60 HRC range, that usually means once or twice a year at home.

Is a forged chef's knife better than a stamped one?

A forged knife is shaped from a single heated piece of steel, which usually adds weight, a bolster and a full tang. Stamped knives are lighter and cheaper and can cut well, but forged blades feel more stable through heavy chopping.
