Look Past the Coating

Ceramic over thin aluminum heats fast but develops hot spots and can warp. A clad stainless body spreads heat evenly, resists warping and protects the coating from localized overheating, which is what wears ceramic out early.

Confirm Induction Compatibility

Aluminum-only pans need a bonded steel disc to work on induction, and response can be patchy. Fully clad pans with a stainless exterior sit flat and respond evenly on every cooktop, including induction.

Check the Oven-Safe Rating

Ratings range from about 350 degrees F to 550 degrees F, often limited by handles or lids rather than the coating. A high rating lets you finish frittatas, roast vegetables and hold food in the oven without switching pans.

Caring for Ceramic-Coated Clad Stainless

Cook on low to medium heat. Clad stainless holds heat well, and high flames degrade ceramic faster than anything else.
